Ground veal, 1 poundr
Chopped onion, 1 cup
Breadcrumbs, 1 cup
1 egg, beatenr

Cajun seasoning, 1/2 teaspoon
Whole milk, 1/4 cupr
Spinach, 10 ouncesr
Cheddar cheese (shredded), 1 1/2 cupsr
Ketchup
Preparation:
In a large mixing bowl, combine the ground meat, chopped onion, breadcrumbs and the seasonings. Pour in the milk into the mixture and blend thoroughly. Then, mould the batter into a loaf shape. Add in spinach pieces over the meatloaf and sprinkle some seasonings. Garnish the top with the shredded cheddar cheese.
Wrap the loaf with a foil and place it on a plate. Refrigerate the meatloaf for a few minutes before placing it in a prepared baking pan. Cook the meatloaf for an hour at 350 degrees F. Then, add some ketchup after cooking the meat. This recipe makes six servings.
2. Meatloaf with Cajun and Salsar

Canola oil, 1 tablespoonr
Finely chopped onion, 1/2 cupr
Minced garlic cloves, 1/2 cupr

Tomato paste, 1/3 cupr
Chili powder, 1 tablespoon
Ground cumin, 1 teaspoon
Cayenne pepper, 1/4 teaspoon
Ground turkey, 1/2 poundr
Ground beef, 1 1/2 pounds
Bread crumbs, 1/2 cupr
Milk, 1/2 cupr
Salsa
Preparation:
In a large skillet, sauté the garlic and onion; make sure that they are tender and not browned. When cooked, place them in a mixing bowl. Add in the jalapeno pepper, tomato paste, red bell pepper, and the other seasonings to the garlic and onion mixture. Blend well with a spoon. Then, put in the ground meat, breadcrumbs and the milk. Continue mixing well.
Mould the mixture into the shape of a loaf before transferring it to the greased loaf pan. Bake the batter for 1 1/2 hours at 350 degrees F. When cooked, let cool for about 10 minutes before slicing. Serve the meatloaf with salsa.
