Broken Wheat Pudding

Ingredients:
Broken wheat: 1 cupr
Milk: 3 cups (pasturised or boiled)
Jaggery (traditional unrefined cane sugar)– 2 cups (or according to taste)
Ghee: ½ cupr
Water: 3 cupsr
Cashews: ¼ cupr
Raisins (draksha): ¼ cupr
Almonds: ¼ cupr
Cardamom: (powdered) – ½ tea spoon
Preparation Method: Heat a frying pan on stove. Put 2 tea spoons of ghee into it. Add broken wheat and fry till it turns golden brown. Take out the frying pan. Place a small cooker on stove pour 3 cups of water to it. Add fried broken wheat to it and pressure cook it. When it is done add jaggery to it and boil well. Fry cashews, raisins, almonds in remaining ghee and pour it to wheat and jaggery mixture. Allow this mix to warm down little. Add pre boiled milk and cardamom to it and stir well.
Caution: Do not add milk when pudding is boiling as milk gets curdled.
Wheat pudding is an ideal dish for children who need nourishment and lots of carbohydrates. Milk, wheat, jaggery and dry fruits supply plenty of simple sugars, vitamins, proteins and minerals required by children. But this is not an ideal diet for children who suffer from child hood obesity and juvenile diabetes. Lactating mothers, body builders and men who suffer from erectile dysfunction, premature ejaculation, low sperm count and motility can consume this pudding.
Wheat balances vata .It boosts body energy and increases moistness, lubrication of body tissues. It enhances stamina. People who have vata as dominant dosha should use wheat regularly. It is an ideal carbohydrate supplement for persons who are on weight loss program. Wheat is a good source of mineral nutrients. It contains significant amounts of iron, phosphorus, magnesium, manganese, copper and zinc. Whole wheat contains Vitamin-E in high concentration which protects the skin. Hence regular use of wheat helps in skin conditions like wrinkles, dry skin and premature ageing. According to texts of ayurveda wheat helps in conditions like low libido, erectile dysfunction and low sperm count and motility.
Milk contains nutrients like protein, fat, mineral matter, water and lactose. It is rich in calcium and vitamins. As it is rich in calcium it makes our bones and teeth strong. Daily consumption of milk increases libido, quality and quantity of semen and helps in erectile dysfunction. Persons suffering from gout are benefited by regular consumption of milk. Milk is widely used in ayurveda treatments. It is instilled as nasal drops and can be used as body pack or face pack.
Nuts and dry fruits are cholesterol free and help to keep heart healthy. They reduce the risk of heart diseases. They provide plenty of minerals and vitamins .Nuts contain plenty of Vitamin E which acts as an antioxidant. They provide protection against diseases. Nuts are very useful for persons who suffer from diabetes.
