1. For this recipe, you will need to gather the following ingredients:
- Chopped green bell pepper, 1/3 cup
- Chopped white onion
- A tablespoon of dried parsley
- Minced garlic
- A 15-oz. can of tomato sauce
- Half pint of sour cream
- Salt, chili powder and pepper to taste
- A 12-oz. jar of taco sauce
- A cup of shredded Cheddar cheese (and about a half cup for garnishing)
- About 4 pieces of chicken breast fillet, halved and skinned
- Tortilla wraps, 8 pieces
2. Before mixing the ingredients, preheat the oven to 350 degrees Fahrenheit. Then, cook the chicken in a medium skillet. Once the meat is no longer pink inside, remove it from the pan and chop it into cubes.
3. Place the chicken cubes back in the pan and sauté it with the onion, garlic, parsley, sour cream, cheese and pepper.
4. Once the cheese melts, pour in the tomato sauce and half a cup of water. Add in the bell pepper, garlic and the chili powder.
5. Stir frequently and allow all the ingredients to blend well.
6. Afterwards, scoop some of the mixture and place it inside the tortilla flour wrap.
7. Once you have finished putting the filling inside all the 8 wraps, place them on a baking dish.
8. Pour a generous amount of taco sauce on top of the wraps. Sprinkle some Cheddar cheese and bake the uncovered dish for around 20 minutes.
You will know that the dish is ready once the cheese melts and the enchiladas are bubbly.
