Ingredients:
1 pound boneless, skinless chicken breast, cut into very small pieces

1 cup canned whole water chestnuts, drained and chopped

1/2 cup raw peanuts

1 tablespoon minced fresh ginger

1/2 cup sliced green onions

1/2 cup minced fresh cilantro

12 large lettuce leaves

Preparation:
Spray a saucepan with nonfat cooking spray, then sauté chicken with peanuts, water chestnuts and ginger over medium-high heat until chicken is cooked through.

Stir in green onions and cilantro.

Spoon filling into center of lettuce leaves, then carefully wrap leaves around the filling.
