Along with a green salad, this is a full spectrum meal.
Ingredients:
1 - Large Yellow Organic Onion - Chopped
12 - Cloves of Organic Garlic - Minced
20 - Medium Organic Potatoes - Cut into Large Pieces… I used red potatoes but any type will do.
8 - Salt-Free Veggie Bouillon Cubes
2 - Tablespoon of Organic Chili Powder
16 - Oz of any Organic Tomato Salsa - Either Mild, Medium, or Hot
1 1/2 - Teaspoons of Organic Turmeric - gives it that rich yellow color
1 - Tablespoon of Organic Garlic Powder
12 - Oz of Cooked Organic Black Beans with Liquid
12 - Oz of Cooked Organic Pink or Red Beans with Liquid
Enough Filtered Water to Cover
Salt and pepper to taste
(Optional) - Add some hot sauce if you like it spicy
Take a large pot and add the onion and garlic and 3 or 4 tablespoons of water and cook the onions and garlic until translucent.
Now, add the potatoes and add with enough filtered water to cover everything and then add all the rest of the ingredients except the beans. And cook until the potatoes are really tender and almost falling apart… that way some of the potatoes will fall apart and thicken the sauce. Then add the beans and cook for another 5 or 10 minutes to get all the goodness of the sauce into the beans.
Let cool and serve
Serves 12 to 15 people or 5 hungry guys.
And this chili freezes well so you can have it another day
And this chili is always better the next day when all the flavors intensify.
