An easy salad either for Lunch or as a side salad for tea
Tastes great and is super healthy!
Cucumbers are a good source of vitami
B, are great for hydrating the body since they’re 95% water, and they contain properties that help fight against cardiovascular disease and cancer!
Tomatoes are a rich source in vitami
A, C, Folic Acid, and Beta-Carotene. Beta-Carotene helps protect the skin against sun damage. They also contain contain a wide array of beneficial nutrients and antioxidan…ts. So let’s get chopping
Ingredients:
1 medium cucumber
1 punnet of cherrie tomatoes or two regular tomatoes
1 cup of Fetta cheese
1 cup chopped fresh basil
1 onion sliced
2 – 3 button mushrooms
2 cups of baby spinach
1 cup of either fresh or frozen peas (tip for peas just put in a bowl of boiling water for about 2 mins then into cold water, then add to salad)
Mix together
1 tablespoon of extra virgin olive oil
1 teaspoon of Balsamic vinegarr
Ground black pepper to taste
2 cloves of grated garlicr
Then pour over salad
Directions:
Wash salad vegies first, then chop cucumber, onion, mushrooms and basil Place in a bowl, add the tomatoes, onion, baby spinach, peas and fetta cheese. lightly drizzle with olive oil, vinegar, and pepper. Toss and enjoy!
This salad will go really well with roast meat, garlic prawns anything your heart desires!!! Enjoy
