These directives provide guidelines for food safety programs in food processing establishments to ensure food safety during the manufacturing process. Having a HACCP program is also one of them.
The HACCP program includes requirements to keep proper laboratory food testing records, quality control records, audit and inspect food processing establishments, and monitor and evaluate Sanitation Standard Operating Procedures (or SSOP), Good Manufacturing Practices (or GMP) as well as Environmental Management Systems (or EMS) techniques.
What is HACCP, and Why should we Care?
HACCP (or Hazard Analysis and Critical Control Point) is a system that assists food service operators in examining how they handle food and implementing procedures to ensure that the food produced is safe to eat.
The Hazard Analysis and Critical Control Point (or HACCP) system was developed by the food industry in the early 1970s as a food safety management tool. Because it improves food safety, it piques the public's interest, and the World Health Organization (or WHO) recognized HACCP as an important concept to prevent food-borne disease about 20 years ago.
