If you have been on a lookout for a dish that India simply adores and is an ete
al kids favorite, few come close to the divine Gajar ka Halwa.

In the cold winter months, nothing could possibly be as much of a mood lifter as the Gajar ka Halwa.

Gajar ka Halwa

Preparation Time: 5 minutes

Cooking Time: 7 minutes

Serves 2

Ingredients

3 medium red carrots, grated

1/4 cup full fat milk

4 tbsp castor sugar

1/4 tsp cardamom powder

A pinch saffron, mixed in a little milk

2 tsp cream

1 tsp ghee

Finely sliced almonds and pistachios

We now present before you Gaajar Ka Halwa, carrot pudding

Let's check out the recipe.

First heat the pan and put clarified butter on the pan.

Let the clarified butter melt. Mix it well.

As soon as the clarified butter heats up or when it melts, add grated carrots to the same. Sauté the added grated carrots for 2-3 minutes.

Remember to keep the flame low.

Next we add in 1/4 cup of milk.

Preferably, use full fat milk so as to discover the excellent taste of the carrot pudding.

You'll see that the milk you had added almost evaporates.

Now let's add in sugar.

You may put in 4 tablespoons, but it's really as per your preferences.

Turn down the flame and mix the sugar with the carrots.

You will find that the sugar melts.

Now add cream and mix well.

Add the kesar (saffron) mixed in milk to the carrots and mix well.

Next, add the cardamom powder to the carrots and mix well.

The smell of cardamom is very enticing.

Mix all these ingredients with the carrots.

Now serve the Carrot Pudding in the pudding bowl.

Garnish the pudding with finely sliced almonds and pistachios.

Put a cashew nut over the top.

The delicious carrot pudding is ready!
