“Full of Antioxidants”
Here is a wonderful soup that’s really tasty and very easy to make. This soup is full of the great nutrition of whole foods and zucchini which is a wonderful weight loss food. Plus there are lots of powerful antioxidants in this soup to keep a person feeling vital and alive.
Ingredients:
4 - Cups of Cooked Organic Garbanzo Beans
3 - Cups of Cooked Organic Corn Hominy
4 - Cups of Cooked Organic Zucchini - Chopped
3 - Cups of Cooked Organic Brown Rice
3 - Cups of Organic Taco Sauce— Any Kind - Mild, Medium, or Hot
10 - Large Organic Green Onions - Chopped — including the tops
4 - Tablespoons of Organic Chili Powder
8 - Organic Whole Corn Tortillas - Chopped into Small Pieces — have some more on hand to line the bowls and to enjoy when eating the soup.
2 - Cup of Organic Greens of Any Kind - Kale, Collard Greens, Parsley - Chopped
Enough filtered water to cover everything
Salt and Pepper to Taste
Garnish with a Bit of Chopped Organic Tomato
Place the garbanzo beans, hominy, zucchini, chopped yellow onions, chili powder, taco sauce, brown rice, and the tortilla bits and water into a large pot and simmer until everything is tender and the tortilla bits are dissolved… they help thicken the soup. Allow the soup to cool to under 116 degrees and then add the chopped greens. We want to keep all the live enzymes alive and well in the greens for great nutrition and healing abilities. Also if parsley is used as the green the antioxidant qualities of this soup is really given a boost.
Then line a serving bowl with more organic tortillas and pour on the hot soup and serve.
Makes about 20 servings.
And this soup freezes well for later use.
“Health Benefits of Whole Organic Corn”
The truth is organic corn can be a important source of lots of great nutrients and a great part of a healthy diet. The Native Americans such as the Aztecs, Incas, and other tribes thrived on corn, and it sustained them during the hard times. And organic corn has a lot of great health benefits in general, and some call it one of the healthiest foods in the world. Here are some of the wonderful health benefits of organic corn.
Corn contains lots of very healthy antioxidants such as coumaric acid, caffeic acid, anthocyanins, ferulic acid, vanillic acid, syringic acid, and protocatechuic acid and lots of bet-carotene all of which help to prevent and repair DNA damage thus helping to prevent disease. And blue corn contains hydroxybenzoic acid which is a very powerful antioxidant and purple corn contains another antioxidant protocatechuic acid. And drying corn at high temperatures does not lower the antioxidant benefit of corn.
Corn contains a large amount of Short Chain Fatty Acids which help to prevent colon disease and cancer. Corn contains lots of fiber which is important for providing a good environment for the growth of probiotic bacteria which boosts up our immune system. One cup of corn contains about 4.6 grams of fiber making it high fiber food. And corn fiber also helps to prevent cardiovascular disease, strokes, cancer, and constipation.
Corn does contain fat, but most of that fat is unsaturated good fats which are important for great health. 1 cup of organic corn contains about 5 grams of protein, making corn a nice source of protein. Corn contains zeaxanthin and lutein which help to prevent macular degeneration. Consuming 1 or 2 cups of whole corn daily has been shown to stabilize blood sugar levels for those with type 1 and 2 diabetes… more than likely due to the high fiber content of the corn. Eating organic corn is linked to long life, lots of cultures that live to be very old incorporate whole organic corn into their diet.
