Ingredients:
2 pieces of large mangoes
1 piece of pork roast (shoulder part)
2 tablespoons of ground black pepper
1 teaspoon of salt
1 teaspoon of chipotle powder
1/4 cup of balsamic vinegar
2 cups of water
2 teaspoons of honey
A jigger of Bourbon whiskey
12 oz. bottle of barbecue sauce
Cooking Procedure:
Place the mangoes in a bowl and peel them. Remove the pits and place these inside the crockpot. Then, chop the mangoes and set aside. Then, drop in the pork into the pot. Add some salt, chipotle powder and pepper. Pour vinegar and water. Cover the pot and cook for 6 hours on low setting. While waiting for the pork to cook, use a blender to process the mangoes until the texture becomes thick. Pour the pureed mangoes into a medium saucepan. Pour in the whiskey and the honey, and sprinkle some chipotle powder. Stir for a while and allow the mixture to simmer. After cooking the pork, shred it by using forks. Pour the mango mixture and coat the shredded pork with it. You can serve the dish as filling for hamburger buns or as topping for rice.
