Here you have the crunchy nuts, the juicy fruit, the savory cheese, and of course a delectable light dressing to top it off. Plus with its spicy sweetness to excite your taste buds, I think we have a winner! Caution – though this can serve a family, be warned that you may find yourself devouring it all.
Spicy Sweet ‘N Juicy Salad

Ingredients
• 1 cup Spicy Honey Mustard Walnuts (or pecans) • 2 tbs. honey
• 1 tbs. mustard
• Cayenne pepper, a few dashes
- 1 cup Arugula
- 2 cups Kale
- 1 cup Spinach
- 1/4 cup Dried Cranberries
- 1/3 cup Mango
- 1/3 cup Peaches
- 1 cup of mixed Yellow, Green, and Red Peppers, chopped
- 1.5 oz. Crumbled Goat Cheese
- Light Vinaigrette Dressing: • 1 tsp. Garlic, minced
- ½ tbsp. Dijon Mustard
- ¼ cup Balsamic Vinegar
- 2 tbsp. Hot Water
- 1 tsp. Honey
- ½ tbsp. Olive Oil
- Salt and Pepper, a dashr
Directions
1.Dunk walnuts in a bath of honey, mustard, and a few dashes of cayenne pepper. Spread atop aluminum foil sprayed with vegetable oil on a cookie sheet and bake at 350 for 10-15 minutes.
2.Mix arugula, kale and spinach.
3.Add cranberries, mango, peaches, peppers and goat cheese.
4.Combine garlic, mustard, vinegar, water, honey, olive oil and salt and pepper for the dressing.
5.Mix and enjoy!
