Sugar Free Blueberry Pudding:
Here is the recipe for sugar free blueberry pudding:
10 packets of Splenda
3 tbsp. of cornstarch
2 cups soymilk (split into 0.25 cups and 1.75 cup proportions)
1 big egg, well-beaten
0.5 tsps. of vanilla
0.125 tsps. of salt
Sugar Free Blueberry Pudding:
Begin by combining the Splenda, salt and the cornstarch into a pot. Slowly mix in 0.25 cups of soymilk into the saucepan, whisking well enough so that the mixture gets to be slurry, which will discourage the cornstarch from lumping.
Now you can go ahead and whisk in the soymilk that still remains. Turn on the heat to medium and then heat through until the point where this mixture begins to simmer.
Start extracting approximately 0.5 cups of the mixture from the pot. Eventually, stir this into the egg in a slow manner so that you end up tempering the egg. The goal is to increase the egg’s temperature without curdling it by abruptly applying heat to it.
After this mixture of egg is satisfactorily tempered, then pour it right back into the pot and proceed to bring it to a boil. Now cook this for up to 1 minute beyond the boil. Remove it from the heat, and proceed to stir in the vanilla.
Pour this newly made pudding into a bowl, serving cups or even ramekins, and cover using plastic wrap that is directly touching the surface. Note that this step may not even be all that necessary since this is done to try to prevent the formation of the so-called “skin” on the top of the pudding.
However, that so-called “skin” is actually created by the casein proteins that are present in regular milk, yet this recipe has utilized soymilk. Still, it is better to be safe than sorry! Before you serve this pudding, be sure to chill it for at least 1 to 2 hours. It will serve between 2 and 4 people.
As you can see, sugar free blueberry pudding is not just easy and fun to make, but it holds real promise. When you eat this, you will be surprised at how delicious it will taste even without all that sugar. The best part about this blueberry pudding is that it will not cause you to gain weight because it is free of sugar.
